By 'stable,' what do you mean? Well developed?
In that case, try taking a questionnaire as one of your characters. If you're able to answer all questions in-character, then they're probably good. If you're really into it, you might want to do the 16 Personalities one, but just any detailed personality quiz will do.

there's plenty of detailed Bios you can fill out for them too, those help me.

i actually have a few i've written myself if you have trouble finding one you like. C:
if you're looking for something to really flesh out your character, i would look for ones not made for RPs, those are generally meant to be quick and short and won't help with personality or backstory.

I believe I am safe in saying that killing off someone else's char is an unforgivable sin?
